Gluten Free
Gluten is a protein commonly found in wheat, barley and rye. Increasing numbers of people are finding that following a gluten-free diet helps to improve many aspects of their health. Why gluten? Gluten has a complex molecular structure and is most often undigested. Some people's bodies, however, recognize gluten as a foreign substance and have an inflammatory response. The resulting symptoms may be specific to the digestive tract though may also appear as a host of other medical problems involving other body systems.
The most recognized form of this "gluten intolerance" is celiac disease. The treatment for celiac disease is a gluten-free diet.
